Pomegranate, Feta & Mint Salad
This salad is perfect as a side dish or on the go lunch option.
Ingredients
1 cup pomegranate arils
1 large cucumber, diced
1 avocado, diced (optional)
½ cup crumbled feta
¼ cup fresh mint, chopped
2 tbsp olive oil
1 tbsp lemon juice
Instructions
Add the cucumber, avocado, pomegranate arils, feta, and mint to a bowl.
Whisk in the olive oil, lemon, and salt & pepper.
Toss gently and serve chilled.
