How to cook Savoy Cabbage
With its crinkly, dark-green leaves, savoy cabbage adds gorgeous depth and savouriness to all sorts of favourite winter dishes, like soups and stews. As their leaves are slightly hardier than their red and white cousins, roll them up into a cigar shape and slice them very finely before stirring them in. They’re great as a side in their own right too, charred until smoky, then cooked in plenty of butter and seasoned with pepper.
Using Savoy Cabbage as a Wrap
The soft, large leaves of Savoy cabbage make for excellent low-carb wraps. It’s mild flavour won’t overpower the fillings which makes it perfect for showing off your fresh ingredients or keeping the focus on the flavour. It is an excellent tool for catering to gluten-free diets, making your menu more accessible. It is also a lot healthier for you than traditional, carb-heavy, processed tortilla wraps.
Method
Slice off the thick stem and rinse thoroughly.
Peel off the larger outer leaves.
If the leaves are not soft enough You have a few options:
Blanching: Boil for 1–2 minutes, then transfer to ice water
Steaming: Steam for 2–3 minutes
Microwaving: Wrap in a damp paper towel and heat for ~30 seconds
Savoy Cabbage Recipe
Here is our recipe for a Savoy Cabbage Garlic Butter Stir-Fry. This dish is perfect as a side dish, or or add in noodles and either tofu or chicken for a hearty, healthy main course.
Ingredients
1 Finely sliced savoy cabbage
2 garlic cloves
2 tbsp butter
1 tbsp olive oil
Salt and black pepper
10g Chilli Flakes
1 tbsp Lemon Juice
Instructions
Heat olive oil and butter in a large pan over medium heat.
Crush or mince the garlic and cook for about 30 seconds until fragrant.
Toss in the sliced cabbage and stir well.
Cook for 5–8 minutes, stirring occasionally, until tender but still slightly crisp.
Season with salt, pepper, chili flakes, and lemon juice.
