Turn Leftovers into a Festive Feast!

The Christmas season often leaves us with plenty of delicious leftovers — turkey, roast potatoes, stuffing, vegetables, and more. Rather than letting them go to waste, this easy-to-scale Festive Leftover Christmas Dinner Hash transforms them into a crowd-pleasing, profitable dish perfect for your catering menu. Quick to prepare, full of flavour, and endlessly adaptable, it’s a smart way to keep your customers satisfied while maximizing your ingredients.

Ingredients 

  • 1.5 kg leftover roast potatoes, chopped into small cubes

  • 800 g cooked turkey (or mixed meats), shredded or diced

  • 400 g pigs in blankets or cooked sausage, sliced

  • 600 g leftover cooked vegetables (carrots, sprouts, parsnips), roughly chopped

  • 300 g stuffing, crumbled

  • 2 large onions, diced

  • 4 tbsp oil or butter

  • Salt & pepper to taste

  • 300–500 ml leftover gravy (or stock)

  • Optional: leftover cranberry sauce for serving

Method

1. Crisp up the potatoes

Heat oil or butter in a large pan or on a flat-top grill.
Add chopped roast potatoes and cook until golden and crispy.

2. Add the onions

Stir in diced onions and cook until softened and fragrant.

3. Mix in the leftovers

Add turkey, pigs in blankets, and leftover vegetables.
Cook for 5–7 minutes, allowing edges to caramelise.

4. Add stuffing

Stir through the crumbled stuffing — it adds texture and absorbs flavour.

5. Bring it together with gravy

Pour in enough gravy to lightly coat the hash.
Simmer for 5 minutes until warmed through and cohesive.

6. Season & serve

 

Taste and adjust seasoning.
Serve hot with a spoonful of cranberry sauce or additional gravy.
